The BEST Meatless Sandwich Ever (Yum)

I’m trying to eat less meat. In the back of my mind I believe it will help me be healthier, save money and challenge me to think a little bit more about my meals.

I love this Roasted Vegetable Sandwich! I will definitely be making it again soon. Try it

  1. 1 Sliced Eggplant

  2. 1 Sliced Red Onion

  3. 1 Sliced Red Bell Pepper

  4. Avocado

  5. 2 Cloves of Garlic, finely chopped

  6. ¼ Cup extra virgin olive oil

  7. Salt & Pepper

  8. French Baguette

Directions:

Preheat oven to 400F. Brush the sliced vegetables with olive oil then toss in garlic and season with salt & pepper

Roast Vegetables for 30 to 35 minutes and make sure to stir occasionally to avoid sticking and ensure evenness

Once vegetables have cooled down, assemble on bread and add avocado. You can add cheddar cheese or herb mayo
